Ingredients
  

For the Dough:

  • 2 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tsp Jamaican curry powder
  • 1 tsp turmeric powder
  • ½ tsp dried thyme
  • ½ tsp dried parsley
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 cup unsweetened vegan milk
  • ½ cup cold vegan butter cubed

For the Filling:

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 scotch bonnet pepper minced (optional)
  • 1 cup green lentils cooked
  • 1 cup young jackfruit shredded
  • 1 cup mixed vegetables peas, carrots, corn
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tsp Jamaican allspice
  • ½ tsp dried thyme
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, whisk together the flour, baking powder, and spices.
  • Cut in the vegan butter until the mixture resembles crumbs.
  • Slowly add vegan milk, mix until a dough forms. Wrap and refrigerate 30 minutes.
  • Meanwhile, heat oil and sauté onion, garlic, and pepper until softened.
  • Add lentils, jackfruit, vegetables, tomato paste, soy sauce, and spices. Simmer for 15 minutes.
  • Roll out dough, fill, and fold into patties. Crimp the edges to seal.
  • Brush with vegan milk and bake at 400°F (200°C) for 20–25 minutes until golden brown.
