Ingredients
  

Dough:

  • 3 ½ cups 420g all-purpose flour
  • 1/4 cup granulated sugar
  • 1 ¼ teaspoons salt
  • 1 tablespoon instant yeast
  • 3 tablespoons aquafaba chickpea water
  • 2 tablespoons melted vegan butter plus more for brushing
  • ¾ - 1 cup lukewarm water

Egg Wash (optional):

  • 1 tablespoon flaxseed meal
  • 3 tablespoons water

Toppings (optional):

  • Sesame seeds
  • Poppy seeds
  • Onion flakes

Instructions
 

  • Whisk sugar, yeast, and warm water. Let sit until foamy.
  • Combine flour and salt in a separate bowl.
  • Mix wet and dry ingredients with aquafaba and melted butter. Knead into a smooth dough.
  • Let dough rise 1–2 hours in a warm place.
  • Punch down, divide into 8 balls, place on baking sheet. Rise 30 more minutes.
  • Preheat oven to 375°F (190°C).
  • Optional: Brush with flaxseed "egg wash".
  • Add toppings and bake for 15–20 minutes.
  • Cool on wire rack before slicing and serving.

Notes

  • Use lukewarm water to activate yeast.
  • Do not over-knead to keep the buns fluffy.
  • Try different toppings for flavor and texture.
  • Freeze extra buns for up to 3 months.
