Dough:
- 3 ½ cups 420g all-purpose flour
- 1/4 cup granulated sugar
- 1 ¼ teaspoons salt
- 1 tablespoon instant yeast
- 3 tablespoons aquafaba chickpea water
- 2 tablespoons melted vegan butter plus more for brushing
- ¾ - 1 cup lukewarm water
Egg Wash (optional):
- 1 tablespoon flaxseed meal
- 3 tablespoons water
Toppings (optional):
- Sesame seeds
- Poppy seeds
- Onion flakes
Whisk sugar, yeast, and warm water. Let sit until foamy.
Combine flour and salt in a separate bowl.
Mix wet and dry ingredients with aquafaba and melted butter. Knead into a smooth dough.
Let dough rise 1–2 hours in a warm place.
Punch down, divide into 8 balls, place on baking sheet. Rise 30 more minutes.
Preheat oven to 375°F (190°C).
Optional: Brush with flaxseed "egg wash".
