Ingredients
  

For the Croissant Dough:

  • 1 cup(125 g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup unsalted butter cubed
  • 1/4 cup(50 ml) ice water
  • 1/4 tsp active dry yeast
  • 1 tbsp granulated sugar

For the Strawberry Filling:

  • 1 cup fresh strawberries sliced
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp lemon juice
  • 1 tbsp strawberry jam optional

For Finishing:

  • 1 tbsp milk
  • 1 egg yolk
  • Granulated sugar for topping

Instructions
 

  • Mix flour and salt; cut in butter until coarse crumbs form. Add ice water gradually to form dough. Chill for 30 minutes or overnight.
  • Cook strawberries, sugar, lemon juice, and cornstarch until jam-like. Let cool and stir in jam (optional).
  • Roll dough, spread filling, and roll tightly.
  • Shape into crescents, brush with egg wash, sprinkle sugar, and proof for 30 minutes.
  • Bake at 400°F (200°C) for 20–25 minutes until golden.

  • Use cold butter and ice water for flakiness.
  • Avoid over-kneading the dough.
  • Let the pastries cool slightly before cutting.
