- 500 g baby spinach
- 1 ripe avocado diced
- 1/2 cup cherry tomatoes halved
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion thinly sliced
- 1/4 cup sunflower seeds toasted
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Wash and dry the baby spinach. Place it in a large bowl.
Chop the avocado and add to the bowl. Gently toss to coat the spinach with the avocado oils.
Add cherry tomatoes, feta cheese, and red onion.
