Instructions
Prepare the Bread: Take your two slices of bread and spread a thin, even layer of softened butter on one side of each slice. This buttered side will be the exterior of the sandwich as it cooks.
Grate the Cheese: For the best melt, grate your cheese yourself rather than using pre-shredded cheese. A combination of sharp cheddar for flavor and mozzarella for that classic stretch works perfectly.
Assemble the Sandwich: On one of the unbuttered sides of a bread slice, pile on the grated cheese. Ensure the cheese goes all the way to the edges for a gooey, crispy cheese crust. Place the other slice of bread on top, with the buttered side facing up.
Cook the Toastie: Heat a non-stick skillet or frying pan over medium-low heat. Place the sandwich, buttered-side down, in the pan. Cook for 3-5 minutes, or until the bottom is golden brown and crispy.
Flip and Finish: Carefully flip the sandwich and cook for another 3-5 minutes. Press down gently with a spatula to ensure good contact with the pan. The second side should also be golden brown, and the cheese should be completely melted and oozing.
Serve: Remove the cheese toastie from the pan. Slice it in half and serve immediately while the cheese is still warm and gooey.
Notes
For an extra crispy crust, try using mayonnaise instead of butter on the outside of the bread.
