- 4 cups chopped romaine lettuce
- 1 cup cooked rinsed, and drained black beans
- 1/2 cup chopped jicama or cucumber
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 1 avocado sliced
- 1/2 cup crumbled cotija cheese
- 1/4 cup tortilla strips
- 1/4 cup chopped fresh cilantro
Dressing Ingredients (inline):
- 1/4 cup olive oil
- 2 tbsp fresh lime juice
- 1 tbsp Dijon mustard
- 1 garlic clove minced
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and pepper to taste
