Ingredients
  

  • 4 cups chopped romaine lettuce
  • 1 cup cooked rinsed, and drained black beans
  • 1/2 cup chopped jicama or cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1 avocado sliced
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup tortilla strips
  • 1/4 cup chopped fresh cilantro

Dressing Ingredients (inline):

  • 1/4 cup olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp Dijon mustard
  • 1 garlic clove minced
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine romaine, beans, jicama, bell pepper, onion, avocado, cotija, and tortilla strips.
  • Blend all dressing ingredients in a food processor until smooth.
  • Drizzle dressing over salad, toss, garnish with cilantro, and serve immediately.
