Ingredients
  

For the Gyro:

  • 1 pound ground lamb or chicken
  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper

For the Salad:

  • 4 cups mixed greens
  • 1 cucumber sliced
  • 1 tomato diced
  • ½ cup red onion sliced
  • ½ cup Kalamata olives sliced
  • 4 oz feta cheese crumbled

For the Tzatziki Dressing:

  • 1 cup plain Greek yogurt
  • 1 cucumber grated & squeezed
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a skillet, heat olive oil. Cook onions for 5 mins. Add garlic and cook 30 seconds.
  • Add ground meat. Cook until browned. Season with oregano, thyme, salt, and pepper.
  • Divide greens among plates. Top with gyro meat, cucumber, tomato, onion, olives, and feta.
  • In a bowl, mix all tzatziki dressing ingredients until smooth.
  • Drizzle dressing over salad. Serve and enjoy!

Notes

  • Use tofu for vegetarian version
  • Add bell peppers or spinach
  • Try low-fat yogurt for lighter dressing
  • Serve with warm pita for dipping
