Ingredients
  

For the Grilled Cheese:

  • 4 slices of bread
  • 1 tablespoon butter softened
  • 1 cup shredded cheese

For the Tomato Soup:

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 28-ounce can diced tomatoes, undrained
  • 1 14.5-ounce can chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

Grilled Cheese:

  • Butter one side of each slice of bread.
  • Place 1/2 cup of shredded cheese between two slices, buttered sides facing out.
  • Heat a skillet over medium heat.
  • Cook sandwiches for 2–3 minutes per side until golden brown and cheese melts.

Tomato Soup:

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion and garlic until soft.
  • Add diced tomatoes (with liquid), chicken broth, oregano, salt, and pepper.
  • Bring to a boil, then simmer for 15 minutes.
  • Use a blender or immersion blender to puree until smooth.

  • Use a mix of cheeses like cheddar and mozzarella for more flavor.
