Ingredients

1 pre-made pizza crust (or your favorite homemade dough)

1 1/2 cups shredded mozzarella cheese

2 cups ripe tomatoes (Roma or cherry tomatoes work great), diced

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tbsp olive oil

1 tbsp balsamic vinegar (or balsamic glaze)

Salt and black pepper to taste

Instructions

Prepare the Bruschetta Topping: In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Stir gently to combine. Set the mixture aside to let the flavors meld while you prepare the pizza.

Preheat and Prepare the Crust: Preheat your oven to 425°F (220°C). Place your pizza crust on a baking sheet or pizza stone. You can pre-bake it for 3-5 minutes to get an extra crispy crust, but it's not essential.

Add Cheese and Bake: Sprinkle the mozzarella cheese evenly over the pizza crust, leaving a small border. Place the pizza in the oven and bake for 10-15 minutes, or until the cheese is melted, bubbly, and the crust is golden brown.

Top and Serve: Once the pizza is out of the oven, immediately spoon the fresh bruschetta mixture evenly over the hot, cheesy crust. The heat from the pizza will slightly warm the toppings. For an extra touch of flavor, you can drizzle a little extra balsamic glaze on top. For a great homemade option, check out this simple balsamic glaze recipe. Slice and serve your delicious bruschetta pizza immediately.

          Notes

For a different flavor profile, you can add a pinch of red pepper flakes to the bruschetta mix for a little heat.
