Blend Ingredients: Add the frozen pineapple chunks and coconut water or milk to a high-speed blender.
Add Optional Flavors: If you like, add the lime juice for a bit of tang and a small amount of agave or honey if you prefer a sweeter drink.
Blend Until Smooth: Blend on high speed until the mixture is completely smooth and a little frothy. If it's too thick, add a splash more coconut water.
Serve: Pour the juice into a tall glass and serve immediately over ice. Garnish with a pineapple wedge and a fresh mint leaf.
Notes
For a richer flavor, you can use canned pineapple in syrup, but this will add sugar to the drink.
