Ingredients
  

1 lb cooked shrimp, peeled and deveined

2 cups Clamato juice (or regular tomato juice)

1/2 cup ketchup

1/2 cup finely diced red onion

1/2 cup finely chopped cucumber

1/4 cup finely chopped cilantro

2 tbsp fresh lime juice

1 tsp hot sauce (like Tapatio or Cholula), or to taste

1/2 tsp salt

1 large avocado, diced

Saltine crackers or tortilla chips for serving

Instructions
 

Prepare the Shrimp: If you're using uncooked shrimp, you'll need to cook it first. For this recipe, you'll want to chill the shrimp for at least 30 minutes after cooking.

    Mix the Sauce: In a large bowl, whisk together the Clamato juice, ketchup, lime juice, hot sauce, and salt. Make sure it's well combined.

      Add the Fresh Ingredients: Add the cooked shrimp, diced red onion, chopped cucumber, and cilantro to the bowl with the sauce. Gently stir everything together until all the ingredients are coated.

        Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes. This allows all the flavors to meld together. Before serving, gently stir in the diced avocado. Serve the Mexican shrimp cocktail in large glasses or bowls with a side of saltine crackers or tortilla chips.

          Notes

          • The best shrimp for this is large or jumbo shrimp. You can adjust the hot sauce to your liking for more or less spice.
