Ingredients
  

2 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and black pepper to taste

1 1/2 cups ripe tomatoes (Roma or cherry tomatoes work well), diced

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1 tbsp balsamic vinegar (or balsamic glaze)

Optional: 1/4 cup shredded mozzarella cheese

Instructions
 

Prepare the Bruschetta Topping: In a medium-sized bowl, combine the diced tomatoes, minced garlic, chopped basil, and balsamic vinegar. Season with salt and pepper. Stir everything gently and set aside to allow the flavors to meld.

    Cook the Chicken: Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until they are golden brown and cooked through. If you prefer to bake the chicken, place them on a baking sheet and bake at 400°F (200°C) for 20-25 minutes.

      Assemble and Serve: Once the chicken is cooked, transfer it to a plate. If using, sprinkle a little mozzarella cheese on top of each chicken breast and allow it to melt from the residual heat. Immediately spoon the fresh bruschetta mixture over each piece of chicken. Serve your bruschetta chicken hot with a side of pasta or a fresh green salad.

        Notes

        For extra flavor, use a balsamic glaze instead of vinegar. You can also add a pinch of red pepper flakes to the bruschetta mix for some heat.
