Ingredients
  

1 baguette or loaf of rustic bread, sliced into 1/2-inch thick pieces

1 large burrata cheese ball, or fresh mozzarella cheese

2 cups ripe tomatoes (Roma or cherry tomatoes work well), diced

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tbsp olive oil, plus more for drizzling

1 tbsp balsamic vinegar or glaze

Salt and black pepper to taste

Instructions
 

Prepare the Topping: In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, 2 tablespoons of olive oil, balsamic vinegar, and a pinch of salt and pepper. Stir gently to combine everything, then set the mixture aside to let the flavors meld.

    Toast the Bread: Preheat your oven to 400°F (200°C) or use a toaster oven. Arrange the bread slices on a baking sheet. Lightly brush each side with olive oil. Toast for 5-7 minutes, or until the bread is golden brown and crispy.

      Assemble and Serve: Remove the toasted bread from the oven. While still warm, spoon or spread a generous amount of burrata or mozzarella cheese onto each slice. Top with the fresh tomato bruschetta mixture you prepared earlier. Add a light drizzle of olive oil or balsamic glaze to finish. Serve your bruschetta cheese immediately.

        Notes

        For extra flavor, rub a cut garlic clove over the toasted bread before adding the cheese.
