4-6slicesof deli-style turkey or leftover roasted turkey
2slicesof Swiss cheese
1/4cupsauerkrautwell-drained
2-3tbspRussian dressing or Thousand Island dressing
2tbspunsalted buttersoftened
For the Russian Dressing (optional, for homemade)
1/2cupmayonnaise
2tbspchili sauce or ketchup
1tbspfinely chopped relish
1tspprepared horseradish
A dash of Worcestershire sauce
Salt and black pepperto taste
Instructions
Prepare the Bread: Lay out the two slices of rye bread. Spread a generous layer of Russian dressing on the inside of each slice.
Assemble the Sandwich: On one slice of bread, layer the Swiss cheese. Place the turkey slices on top of the cheese, followed by a mound of the well-drained sauerkraut. Top with the second slice of bread, dressing-side down.
Butter and Grill: Generously spread softened butter on the outside of both slices of the sandwich.
Cook the Sandwich: Heat a large skillet or griddle over medium heat. Place the sandwich in the pan and cook for 4-5 minutes, or until the bottom is golden brown and crispy.
Flip and Finish: Carefully flip the sandwich and cook for another 4-5 minutes, or until the other side is golden and the cheese is fully melted and gooey.
Serve: Remove the turkey reuben from the skillet. Slice it in half and serve immediately with a side of chips, pickles, or a simple green salad.
Notes
Using pre-made Russian dressing is a great time-saver.
