Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 24-cup mini muffin tin.
Combine Wet Ingredients: In a large bowl, whisk together the melted butter and granulated sugar until well combined. Whisk in the eggs and vanilla extract until the mixture is smooth.
Add Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet mixture and stir with a spatula until just combined. Do not overmix. If you’re using chocolate chips, fold them in now.
Fill and Bake: Fill each cup of the prepared mini muffin tin about two-thirds full. Bake for 18-22 minutes, or until a toothpick inserted into the center of a brownie bite comes out with moist crumbs attached. The top should look set and crackly.
Cool and Serve: Let the brownies cool in the tin for about 10 minutes before carefully transferring them to a wire rack to cool completely.
Notes
This recipe works best in a mini muffin tin. You can double the recipe for a larger batch.
