Ingredients
  

Chocolate Base:

  • 8 oz. bittersweet chocolate 60–70% cacao, finely chopped
  • ¼ cup heavy cream

Mousse:

  • 1 cup heavy cream chilled
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Topping (Optional):

  • Whipped cream
  • Chocolate shavings
  • Fresh berries

Instructions
 

  • Melt the Chocolate: In a double boiler or heatproof bowl set over simmering water, melt the chopped chocolate with the heavy cream until smooth and glossy. Set aside to cool slightly.
  • Whip the Cream: In a chilled bowl, whip the heavy cream until stiff peaks form. Gradually add the powdered sugar and vanilla extract while whipping.
  • Fold it Together: Gently fold the cooled chocolate mixture into the whipped cream until just combined. Avoid overmixing, or the mousse will lose its airiness.
  • Assemble and Chill: Divide the mousse evenly among 12 serving cups or glasses. Chill for at least 2 hours or until set.
