Crust:
- 150 g chocolate cookies crushed
- 50 g melted butter
- 1 tbsp sugar
Cheesecake:
- 450 g cream cheese softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup unsweetened cocoa powder
- 1/4 cup melted dark chocolate
- 1 tsp vanilla extract
Mousse:
- 1 tbsp unflavored gelatin
- 1/4 cup cold water
- 200 g dark chocolate chopped
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Prepare the Crust: Preheat oven to 180°C (350°F). Combine crushed cookies, melted butter, and sugar in a bowl. Press firmly into the bottom of a greased springform pan. Bake for 10 minutes. Let cool.
Whipped Dream: Beat cream cheese and sugar until light and fluffy. Add one egg at a time and thoroughly mixing each one. Stir in cocoa powder, melted chocolate, and vanilla extract until smooth.
Mousse Magic: Bloom gelatin in cold water for 5 minutes. Melt chocolate in a double boiler. In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in melted chocolate and bloomed gelatin.
Assemble the Masterpiece: Pour cheesecake batter over the cooled crust. Bake for 40-45 minutes, or until the edges are set but the center remains slightly jiggly. Let cool completely.
Top with Moussey Bliss: Gently spread the chocolate mousse over the chilled cheesecake. Refrigerate for at least 4 hours, or overnight, for optimal texture.
