Ingredients
  

For the Meat:

  • 2 lbs boneless skinless chicken thighs cut into thin strips
  • 1/4 cup yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sauce:

  • 1/4 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • Salt to taste

For the Wrap:

  • 4 large lavash flatbreads
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomato
  • 1/2 cup chopped lettuce
  • 1/4 cup chopped parsley

Instructions
 

  • Marinate the Meat: In a bowl, mix all meat ingredients. Cover and refrigerate for at least 2 hours or overnight.
  • Prepare the Sauce: Mix all sauce ingredients in a small bowl until creamy. Set aside.
  • Grill the Chicken: Heat a grill pan over medium-high heat. Thread marinated chicken onto skewers. Cook 8–10 minutes per side.
  • Rest the Chicken: Remove from heat and let rest for 5 minutes before slicing.
  • Assemble the Shawarma: Warm flatbreads. Spread sauce, then layer with chicken, onion, tomato, lettuce, and parsley.
  • Roll and Serve: Roll the wrap tightly. Slice and enjoy!

  • Use a meat thermometer to ensure chicken reaches 165°F.
