Ingredients

  • 1/2 cup low-sodium soy sauce or tamari for gluten-free
  • 1/2 cup vegetable broth
  • 3 tablespoons maple syrup
  • 1 tablespoon light brown sugar or coconut sugar for refined sugar-free
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon garlic powder
  • 2 teaspoons freshly grated ginger
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water optional, for thickening

Instructions

  • Gather your ingredients and prepare the thickening slurry (optional): Combine the cornstarch and water in a small bowl and set aside.
  • Sizzle and simmer: In a saucepan, heat the sesame oil over medium heat. Add the garlic powder and ginger, sauté for 30 seconds until fragrant.
  • Build the base: Pour in the soy sauce, vegetable broth, maple syrup, brown sugar, and rice vinegar. Bring to a simmer, stirring occasionally.
  • Sweeten and thicken (optional): Once simmering, taste the sauce and adjust the sweetness with additional maple syrup or brown sugar. If you prefer a thicker sauce, gradually stir in the cornstarch slurry until desired consistency is reached.
  • Let the flavors meld: Allow the sauce to simmer for 5-10 minutes, allowing the flavors to deepen and meld.
  • Glaze and enjoy!: Use your homemade vegan teriyaki sauce immediately or store in an airtight container in the refrigerator for up to a week. Glaze tofu, veggies, stir-fries, or even drizzle over rice for a taste of umami bliss.

Notes

  • Add red pepper flakes or sriracha for heat.
  • Use molasses instead of sugar for a richer flavor.
  • Makes a great marinade for tempeh or seitan.
  • Perfect for burgers, rice bowls, or dipping.
